Easy Quail Egg Salad

Preparation time: 10 minutes
Ingredients:
12 slices from a small baguette
Olive oil
12 quail eggs
110g bag salad leaves
2 tbsp French dressing
Salt and freshly ground pepper
Preheat the oven to 190C/gas 5. Drizzle the baguette slices with oil. Bake for 8-10 minutes until golden. Dress the salad. Arrange the baguette slices and salad on four plates. Heat a non-stick pan over a medium-low heat. Break in the eggs. Cook until the whites are set but the yolks still soft. Add to the plates, season, and serve.
